I’ve been bad about keeping up with VFYT submissions. Sorry about that; I promise you all who have sent them recently that I’ll get them posted soon. I decided to post this one today because I wanted to share with you a super-easy thing I made this morning that caused real delight among the kids in my house. It’s Martha Stewart’s Puffy Maine Pancakes recipe, or at least my slight modification of it. These pancakes are super-eggy; Julie says they taste like the closest thing she’s ever had to the terrific Dutch pancakes we loved so much in Amsterdam. Stewart’s recipe involves a small black iron skillet. We don’t have them, but we do have an 8-inch black iron skillet. For three plate-sized pancakes, I doubled Stewart’s recipe. They are really delicious. I’m going to try making savory versions with cheese and ham one day soon.

Anyway, the recipe could hardly be easier. I can’t think of anything I’ve made recently that was so easy, but gave such pleasure. That, by the way, is No. 1 Son, who arose long after the rest of us finished breakfast, and yes, who checks his e-mail over pancakes.
