… because today is Acadian Day in Louisiana, an official state holiday in honor of Cajun culture. Where would America be without the Cajuns? We’d have no boudin, no jambalaya, no fais-do-dos, no cochons de lait, no Christmas bonfires on the levees, no Cajun music, no beautiful accents, no crawfish boils, and nobody like this old gentleman below.
