View From Your Table

Krotz Springs, Louisiana

That’s a link of boudin I had as second breakfast this morning, sitting in my car in the parking lot of Kartchner’s, a Cajun smokehouse and grocery store on the banks of the Atchafalaya River. Spicy, delicious, and reason to praise the Lord for making Cajuns. Eat your heart out, Calvin Trillin [2]!

I prefer the boudin balls. Just loaded up a freezer full of kartchner Cajun meats on our way back to Dallas from new Orleans. Best mixed grill Evah.

Do y’all prefer to eat casing and all? That’s how I like it. Makes it much more convenient.

[Note from Rod: Not me. I do like most people here do, and leave the casing behind. — RD]
