From the culinary capital of Mexico, Puebla, a Chile en nogada, which, as legend has it was prepared here in 1821 to celebrate the formalization of Mexican independence.

August is the traditional month, when the ingredients are at their best, but we splurged.  It’s a mind-blowing combination of chile, fruits and nuts, meats and spices, in the colors of Mexico: green, white and red

In the background is Puebla’s 450-year-old cathedral, off the beautiful Zocalo, town square.
