I’ve been home, fighting bronchitis. My mom took my 2 year old in, since he’s not sick and sent home a home cooked meal of my favorite, rice and beans w/stewed chicken (pollo guisado). The coloring of the chicken and sauce is prepared by browning sugar in a pan coated with oil. It is hands down one of my favorite comfort foods. I really needed home cooking tonight.

That’s some happy food, for sure. Say, all you Orthodox Christian readers of this blog. Tomorrow, Sunday, is the last day we can have meat before Pascha (Easter). I would like to issue a special VFYT challenge to Orthodox readers: take an image of your last meat meal before Lent tomorrow. Follow the VFYT rules; don’t just stand over the table and photograph the food, but make sure to shoot it in a context. People are find, but no faces. I’m grilling two fat steaks. Send me your VFYTs at rod (at) amconmag.com
