What restaurant is this and what is the food being eaten? New Orleans and a few other places are the best eating places in the country.

Where is this? As fate would have it, I’m in New Orleans right now for a conference and I’m curious to check it out!

That place serves delicious food, but it’s too clever by far. Foie gras made into cotton candy and “dippin’ dots,” for example. I first ate there about 18 months ago and had a great meal, but I left feeling guilty — like I’d had great sex with a stranger, or like I had burned a $100 bill to win a $5 bet.
Yes, I have been back to that restaurant. Like I said, the food tastes great.
But must a pig’s face be made into bacon and liquefied for inclusion in my $12 cocktail? Must the foie gras be served with pop-rocks?
I felt like the chef had crossed some sacred boundary, or at least violated natural law. Or maybe we both had. O, the teleology!
