Our New England bureau chief sends this shot in from Saus, a Belgian frites and waffles joint. Follow the link to the menu there. I would give my left arm to have a place like this in my town.

That looks like ketchup to the side. Boring. With proper Belgian frites (double fried in beef fat) mayonnaise or andalouse go better than ketchup.

I was just there again on Friday night, and along with a abbey ale, I had a seasonal Belgian-American special:

Liège waffle with apple-cider compote, apple-pie ice cream, and salted caramel on top.
Saus just opened last year; I wish I had thought of such a place!

Well made French fries are divine. I’ve had them with garlic mayo, mayo mixed with horseradish, mayo mixed with ketchup, or just ketchup. Frankly I’d give up eating meat before I gave up French fries.

Looks interesting. Perhaps a bit over the top for us culinary Philistines.
Question: if you had to give up foodiness or contemplation of imminent apocalypses, which would you eschew?

Ahhh! I love this restaurant! I worked a summer job this year a 5 minute walk away, and ate lunch about twice a week at Saus. Forget their fries and waffles, their frikandels are where it’s at…
Excellent beer selection, too.

Fries probably my absolute favorite food ever, but only if done well. Since most places around here don’t, I keep a five gallon bucket of beef tallow in my deep freezer so I never have to do without. Nothing beats fries in tallow..except maybe fries in goose fat.

Nathaniel, I was on Cape Cod this weekend and tried some fries cooked in duck fat, and you’re not kidding! Mmm.

You mean we can have Belgian food without having a mass influx of Belgians?
BTW the atmosphere seems way too warm for an actual Frites place — in Brussels at least they tend to be all sterile white tile, with the various sauces served from stainless steel dispensers — like metal versions of the mustard dispensers at ballparks.

Trying to come up with a joke about the Left Arm of Rod without sounding too blasphemous. Not succeeding.

And with the immortal boy reporter as decor!
Mille Sabords! (That’s “blistering barnacles” to you philistines out there.)
